Cool Down in Summer

This delicious summer beverage recipe comes from The Yoga Body Diet by Kristen Schultz Dollard and John Douillard, DC., and was developed to be prepared using a juicer. If you don’t own a juicer or prefer to get a little extra fiber in your drink, this will also whip up fabulously in a blender.
Ingredients
- Watermelon – 1 cup, roughly chopping (remove black seeds if blending)
- Cucumber* – 2/3 cup, peeled and chopped
- Fresh Mint Leaves – 2 Tbsp, packed
Instructions for Juicer
Place the watermelon, cucumber and mint in a juicer and process according to the manufacturer’s instructions for your juicer. Serve immediately.
Instructions for Blender
Place the watermelon, cucumber and mint in the blend and blend on high until smooth or to desired consistency.
*Do not worry about mixing watermelon and cucumber. Cucumbers are easily digestible members of the melon family!
