We all know veggies are important, but do you know why? The cellulose in your vegetables attaches to the bile that is attached to toxic cholesterol, and escorts it into the toilet. If you don’t eat enough veggies, up to 94% of the bile with toxins in tow are re-absorbed back to the liver and blood stream where they put us at cardiovascular risk.
So, how many veggies should we be eating on a summer meal plan? I suggest that 1/2 of each plate at meals be veggies and 1/2 of each plate be split between your protein and starch. Yup… That’s a lot of veggies.
For example, 2 eggs and a slice of Ezekial bread makes up one-third of your breakfast plate. Now we need two-thirds of the plate filled with veggies. Fresh spinach, baby greens, string beans or kale – all can be eaten raw or lightly steamed. Get the idea? Make it your goal this summer to get the 2/3 -1/3 with each meal.
